Home-Grown Strawberry Syrup and Cordial
A sweet, floral and surprisingly simple way to make the best Strawberry Syrup. This syrup can be used in a variety of Cocktails, like Home-Grown Strawberry Daquiri, Mocktails and can be used to make the very best Strawberry Cordial for lemonade.
Making this magnificent Strawberry Syrup is really simple, it needs water, sugar and the tops of strawberries, usually thrown out when the main sweet fruit is used. In this recipe, nothing goes to waste. Why not use the fruits in a delicious Strawberry Daquiri Cocktail?
Ingredients List
Strawberry tops (10-12)
Whole Strawberries (2-3)
Water (200ml)
Sugar (200g)
Growing Tips & Tricks
When harvesting from your Strawberry plant, remember to pull the strawberries or cut the green stalks off when they are bright red. If they come away easily, they’re ripe and ready to eat!
To make the Strawberry Syrup;
- Cut the tops off the strawberries and keep them aside. You can keep the leaves on as they add a delicious flavour to the overall syrup. Add a few whole strawberries to add an extra floral flavour.
- Put the strawberries, water and sugar in a pan and put on a medium heat.
- Once boiling, reduce the temperature and leave it to simmer for 20 minutes until it turns deep red.
- Strain the mixture into a jug and let cool.
- Once cool, pop it into a jar or bottle and save it as a simple syrup to add to cocktails, mocktails and cordials.
And you’re done! Pair with a summery day for a sweet treat.
To make your own Strawberry Lemonade
Just add a dash of the Strawberry Syrup to a glass of lemonade to make those summer days easy and sweet.

You could add a sprig of Rosemary or a slice of lime. You can grow your own Rosemary for this as this herb does well on patios.
