The best Fresh Strawberry Flapjacks

This home-grown Strawberry Flapjack is perfect for when you want a bit of a sweet, strawberry energy boost! A great snack to take on summery walks or just a delightfully sweet nibble with a cosy cup of tea. Pair this with a home-grown mint tea to make this a calming moment to remember.

Home-grown Fresh Strawberry Flapjack

To make this sweet nibble, you’ll need 250g of strawberries, about 15 medium strawberries. Remember to save the tops of these strawberries to use them for a simple and sweet Strawberry Syrup.

Ingredients List

250g Fresh Strawberries
125g butter
100g brown sugar
5tbsp golden syrup
270g oats

Optional
100g White or Dark Chocolate

Growing Tips & Tricks

When harvesting from your Strawberry pant, remember to pull the strawberries or cut the green stalks off when they are bright red. If they come away easily, they’re ripe and ready to eat!


  1. Put the golden syrup, butter and sugar in a microwave safe bowl and melt together in the microwave for 2 minutes, stirring after about 40 seconds.
  2. Take the bowl of melted goodness and add your oats. Stir and make sure the mixture coats every oat.
  3. Prepare your strawberries by removing the green leafy tops. You can keep these to make a strawberry syrup later.
  4. Chop the strawberries into small pieces and add them to the mix, making sure they are well incorporated to the oats.
  5. Line a deep baking pan with parchment and tip the mixture in, making sure to flatten it right to the corners. You can pop a plastic glove on and spread it flat. Pop into the oven for 25 minutes at 180 degrees.
  6. Remove from the oven and leave to cool in the tray. Indent the top to mark your flapjack pieces (this will make it easier to divide later).

And you’re done! This is a delightful home-grown snack to pack for a summer picnic.

Feeling Fancy?

Why not melt a bit of chocolate and drizzle over the top. White or Dark chocolate works well! Make sure the flapjack is cool before doing this. After coating the tops with chocolate, pop it in the fridge for about an hour to set.
